Salted Caramel Apple Bread & Apple Hill, CA

Man oh man, I’ve been busy lately!  Not only am I slowly working through molecular formulas and hours worth of organic chemistry labs, I’ve also got my share of to-the-grind work hours and a new internship that I’m super in love with taking lots of my time and energy!  A lot has changed for me in the past several weeks, and while I won’t delve into it that much, I can definitively say it’s really not much of a “loss” to “lose” someone who is unappreciative of who you are and not supportive of life ambitions and endeavors.  It’s so tough to be your true self with someone like that, and life is too short not to be your own, genuine, self with someone who really deserves it.  I believe that you can’t lose the ones who are worth the fight, because they’re the ones who never want to be lost.  Surround yourself with GOOD people, and the others will just sort of filter themselves right on out.  Done and done! 🙂

Now on to what’s REALLY important!  It’s THAT time!…it’s THAT season!…APPLE SEASON!!  I wait patiently for this all year long.  Be still my heart, apple season *flutter, flutter* <3

I know you can pretty much get an apple any time of year these days, but you have to admit, you can’t really GET an apple.  Maybe a mealy, lac-luster, whatever kind of apple, but not a good one.  Good apples can only be found this time of year, kissed gently by just enough cool air as it graces leaf-dusted hillsides.  Lucky for me, I happen to live just a hop, skip, and a jump away from just such a hillside-studded place – a veritable apple mecca…a town actually named after the delicious, crisp, refreshing apple; a charmingly sweet town that’s ready and willing to let everyone know just what time of year it is by offering up warm apple cider, hand-crafted pies, and of course, fresh apples.  It’s unmistakable.  Unapologetic.  Amazing.

Apple Hill is this wondrous, wondrous, magical place (especially if you’re into popcorn or kettle corn, but don’t even get me started on that!) in Northern California where fall has officially taken root.  It’s the town you read about in books because places like it are all but extinct.  If any place in the world could actually give you a hug and grab you by your sensibilities at the same time, it’d be Apple Hill!  Boxes, and crates, and bins of apples, as far as the eye can see, every size, every color, about a million different varieties and names I’d never even heard of!  An apple for every personality, every mood, every thought…every baking endeavor, and then some. Super Bowl XLVI (aka Tom Brady Bowl) Guacamole & Baked Sweet Potato Fries

NOoooooOoooooOOOOOOOOOOOOOOOOOOOOOO!!!!!

I think by now you can tell I’m a bit of a New England Patriots/Tom Brady fan, and by a “bit” of a fan, I mean I could care less about the team and feel like my heart is breaking right along with Tom’s.

I was so hopeful that history wouldn’t repeat itself and I wouldn’t end up once again typing on my computer as it short-circuits from the tears streaming from my eyes as I try to muster a congratulatory smirk in the general direction of all the Giants fans out there.  Hey, I never said I was a GOOD sport, per say…;p

Anyway, the one good thing that came out of the Super Bowl, and I mean aside from getting to stare at Tom Brady for several hours in tight, butt-hugging spandex, was the food!  I had some pretty awesome snacks lined up, and although they did nothing for the Patriots, at least I got to drown my anxiety in yummy treats like guacamole dip and baked sweet potato fries.  I know what you’re thinking, but game day snacks can be both delicious AND healthy, and you’ll never convince me that they have to be one or the other!  I know what you’re thinking again, and you’re about to throw this post in my face and say game day is over and you can’t use any of these recipes during the Super Bowl…but I assure you, you can eat this dip and these fries any dang time you want!  And also, there will be other games, duh!

Fresh Guacamole

Bursting with flavor and healthy ingredients, this guac is as perfect with veggies or crackers as it is with traditional tortilla chips!  I’m pretty heavy-handed with the garlic and lime juice because I love the bold flavors, but feel free to amp it up even more or tone it down if you prefer.

Ingredients:

* 3 avocados
* 1/4 cup salsa, or fresh-chopped tomato and jalapeno
* 1/8 finely chopped onion
* 2 cloves finely minced garlic
* 1/4 cup finely chopped cilantro (optional)
* Juice from 1/4 of a lime
* Salt & pepper to taste
* Pinch of cumin

Directions:

Scoop out the “meat” of the avocado and mash into a bowl with a fork. Add in the salsa or fresh tomato and jalapeno, and onion. Stir in the garlic, cilantro, lime juice, salt, pepper, and cumin.

That’s it – simple! Enjoy with chips, crackers, veggies, whatever your little heart desires!

And now, on to the spuds!

 Martha Stewart’s Baked Sweet Potato Fries

These are slightly adapted from the baked fries on the Martha Stewart website here!  They’re more like a thick-cut steak fry than a thin, flimsy fry, in that they’re hunkier and  don’t get crispy all the way through.  Trust me, I don’t usually like fries, and won’t touch a regular potato “Jo-Jo”…and I think these are super delish!

Ingredients:

* 3 large sweet potatoes, cut into 1/2″ sections
* 3 egg whites
* salt, pepper, garlic, oregano, & basil to taste (I used Italian seasoning)

Directions:

Line a baking tray with parchment paper or a Silpat. Lay out cut sweet potatoes on a microwave safe plate, and microwave for 2 minutes. Flip and microwave another 2 minutes. Allow to cool while preparing the egg whites.

Separate 3 egg whites into a bowl and whisk until frothy. Once cool to the touch, dip each fry into the egg whites and allow to drain before arranging on lined pan in a single layer. Sprinkle with salt, pepper, garlic powder, oregano, and basil. Bake for about 15 minutes. Remove from oven and flip the fries. Bake another 10-15 minutes. Test for fork-tenderness, and crispiness, and bake an additional 5-10 minutes until brown and slightly crispy. Allow to cool before enjoying!

True, they’re not the most photogenic little fries around, but they sure are DELICIOUS!  They get the job done and are super healthy!

Thanksgiving Cranberry Sauce

Happy (Turkey Day) Thanksgiving!

I know it’s a little late in the game to be posting a Thanksgiving recipe, since most of you are probably spending time with friends, family, and massive amounts of food resulting from weeks of pre-planning and not scouring the internet for last minute recipes…but this cranberry sauce is fairly holiday universal.  I’ll be smothering my turkey with it tonight, but I can see baking it into muffins, globbing it on oatmeal, or even cooking some up for Christmas dinner.  It’s festive!

I’d love to stay and chat, but I have thanks to be giving, and turkey to be getting ready for!  More on that later.

Super Simple Cranberry Sauce

Ingredients:

* 1 bag (12 oz.) fresh cranberries
* 3/4-1 Cup granulated sugar
* 1 Cup Water
* 1/4 Cup fresh squeezed orange juice
* Zest from 1 Orange

Directions:

Add all ingredients into a sauce pan and heat to a boil, stirring occasionally.
Once boiling, turn down the heat to allow cranberries to simmer and pop. Continue simmering for about 10 minutes.

Allow to cool in the pan for about 20 minutes before transferring into a jar or pretty dish. Eat as is, or refrigerate.

Red Pepper Hummus

Don’t tell anyone, but I’m double-dipping (umm…pun intended?!) a little on my post today! Fresh red pepper hummus definitely falls more into the Sprouts side of my blog spectrum, but I wanted to feature it over here on Sprinkles as well! 🙂

If you missed it, my family hosted a Texas-Style Pit BBQ last weekend. In keeping with the spicy, bold flavored theme, I whipped up this red pepper hummus as an appetizer. Pepper Predominant as it may be, I have to admit the peppers didn’t come from our garden…Shh!

Green peppers just wouldn’t have had the same effect in the recipe, I don’t think, though maybe eventually I’ll give them a try.

Red Pepper Hummus

Ingredients:

* 1 15 oz. Can Garbanzo Beans
* 2 Tbsp Tahini
* 2 Tbsp Lemon Juice
* 1 Medium Sized Red Pepper, chopped
* 3 Chipotle Peppers in Adobo Sauce, sliced
* 2 Tbsp Chopped Garlic
* 1 tsp Paprika
* 1/8 tsp salt
* Pepper to taste

Directions:

Rinse and drain canned garbanzo beans, and add to the bowl of a food processor. Process until smooth. Add in tahini, lemon juice, chopped garlic, and process again until smooth.

Add the chopped red pepper, processing in between additions. Add in the chipotle peppers and process.

Finally, add the paprika, and salt and pepper to taste. Adjust seasonings as needed.


From the looks of it, you’d think I could eat hummus on just about anything and everything…You might be right!
